For your soup cravings, we’ve created this potato soup recipe inspired by the classic comfort dish we all love. Have a bag of potatoes you need to use up? Even better. With just a few simple steps, you’ll have a from-scratch dinner that’s creamy, comforting, and just as good the next day. It’s also easy to double or triple if you’re feeding a crowd or planning ahead.
Whether you’re feeling under the weather, braving a cold day, or simply craving something hearty and satisfying, this potato soup checks every box.
Ingredients:
- 6 strips uncooked bacon
- 1 medium onion, chopped
- 1 tablespoon minced garlic
- ¼ cup all purpose flour
- 4 large potatoes, peeled and diced
- 4 cups chicken broth
- 2 cups milk
- 1 teaspoon salt, or to taste
- ½ teaspoon pepper
- ½ cup sour cream
- Shredded cheese, chives,
- Bacon, sour cream for topping, optional
Directions:
- Cut the bacon into pieces and add to a large pot over medium heat. Cook until crispy, then remove the bacon from the pot and set aside. Leave the bacon grease in the pot.
- Add the chopped onion to the pot and cook until softened, about five minutes. Add the garlic and cook for another minute.
- Sprinkle in the flour and whisk to combine.
- Pour in the broth and milk and whisk together, then add the diced potatoes and salt and pepper.
- Bring to a boil, and cook until the potatoes are tender, about 12-16 minutes. Turn off the heat.
- Decision time! If you prefer a completely smooth soup, add the soup to a blender and blend until smooth, working in batches if needed. If you enjoy some chunkiness in your soup, only puree half of it, allowing some pieces of potato to remain. Alternatively you can use an immersion blender.
- After the soup is blended to your liking, add in the sour cream and stir until smooth.
- Crumble the bacon and either add it back to the soup or serve it as a garnish. Enjoy!
