If you’re craving something reminiscent of a classic éclair but want it in an easy, no-fuss format, this is the dessert for you. Layers of creamy vanilla pudding nestled between graham crackers mimic choux pastry, and topped with chocolate ganache, it’s a dessert that tastes elegant without any of the traditional baking challenges, AND is one of our favorites.
Ingredients
2 3.4oz boxes French vanilla pudding mix
3 cups milk
1 8oz container whipped topping, thawed
1 box graham crackers
Topping:
1/4 cup milk
1 cup sugar
1/3 cup cocoa
2 tablespoons butter
1 teaspoon vanilla
Directions:
- Mix the vanilla pudding powders with milk and let it set until thick
- Arrange a layer of graham crackers at the bottom of your pan
- Spread half of your pudding over the crackers in an even layer
- Repeat: Add another layer of graham crackers and top with the remaining pudding
- Make the ganache: heat up and whisk cocoa powder, sugar, and milk until smooth
- Take off of heat and add vanilla and butter
- Top pudding with chocolate ganache and spread smoothly
- Refrigerate for at least four hours (or up to overnight)
