Ingredients

2 1/2 lbs russet potatoes

4 tbs butter

4 oz cream cheese

2-4 tablespoons cream or milk

Salt and pepper

Directions 

  1. Peel the russets and cut them into even-sized chunks. This ensures they cook uniformly and mash smoothly.
  1. Place the potatoes in boiling water for about 20-30 minutes. You’ll know when they are done when pierced with a fork and there’s no resistance. 
  1. Drain the cooked potatoes well before mashing. Excess water can make your mash runny.
  1. Return the potatoes to the pot, off the heat. Add butter, cream cheese, and cream. Mash until smooth. We prefer using a hand mixer to mash! 
  1. Salt and pepper to taste. Give it a final stir to ensure everything is evenly combined. More butter is optional but highly recommended. 🙂
