Looking to elevate your holiday side dish game? Our Fluffy Potato Casserole takes classic potatoes to the next level with rich creaminess and a golden, crispy onion topping. It’s the perfect balance of savory, creamy, and crunchy, sure to impress at Thanksgiving, Christmas, or any gathering! Who else is drooling right now?


Here’s the recipe:

Ingredients:

6 large or 8 medium potatoes, peeled and chopped
1 onion, chopped
2 tablespoons butter
8 oz cream cheese, softened
¼ cup milk
2 eggs
1 tablespoon flour
2 teaspoons salt
6 oz crispy fried onions

Directions:

  1. Place your peeled and chopped potatoes in a large pot with water and boil until tender, about 20 minutes.
  2. While the potatoes are boiling, sauté the chopped onion with the 2 tablespoons butter.
  3. Preheat the oven to 350.
  4. Drain the potatoes, and add them back to the pot if using a hand mixer. If using a stand mixer, then add the drained potatoes to the bowl of a stand mixer.
  5. Add the sautéed onion, softened cream cheese, milk, eggs, flour, and salt to the potatoes.
  6. Mix ingredients together until smooth and well combined. Put into a 9×13 baking dish, smoothing out the top.
  7. Bake for 30 minutes.
  8. Remove from the oven and evenly sprinkle the crispy onions on top.
  9. Return to the oven and continue baking for another 15 minutes.
